Copper Stallion Classics
In western style riding horses are trained to “neck rein” and there is little time for communication between horse and rider.
Horses are given more freedom to rely on instinct while working. The saddle is heavier and built to absorb the shock of
rigorous riding and roping of livestock. The saddle has a deep seat to accommodate work activities and the pommel is
topped with a horn used for wrapping a lariat.

Developed in England, the flat English saddle has no saddle horn and is designed to give the horse more freedom to move in a more optimal manner.
Most English bridles include some form of noseband and a closed rein to prevent them from dropping to the ground should the rider become unseated.
Communication between horse and rider is essential as the rider controls the horse’s moves through the use of reins and the rider’s legs. Emphasis is
placed on appearance in competitions.

The word “pesto” comes from the Italian word “pestello” which is the wooden tool that we know as a pestle.
It is used to crush fresh basil in the making of what we know as pesto, with fresh garlic, olive oil and pine nuts. The sauce probably originates in
Genoa, Italy and basil plants can be seen on many window ledges in the town

The Caesar salad has been a staple in British cuisine since AD 43 when Julius Caesar first invaded Britain. It is said that Emperor Hadrian, who
built a wall across the entire country to keep the Scots out, owned several plantations of romaine lettuce.
Seriously, we made that last part up. There are several stories as to where and when the Caesar salad originated. Most food historians
point to San Diego or Tijuana as the originating city.

For the past several years, wraps have been a culinary buzzword. However, the concept itself goes back to ancient times where the Chinese wrapped
and rolled food using everything from lettuce leaves to rice flour wrappers. The French fold ordinary ingredients into lacy crêpes to make a healthy
and tasty lunch. In Mexico, tortilla wraps are a part of daily life used to scoop up rice and beans. Mediterranean meals always include a pita wrap
with their many healthy dips, salads and yoghurt dishes.

Responsible for directing the hounds in
the course of the hunt, the huntsman is also responsible for looking after the hounds in the kennels. The huntsman usually carries the horn to communicate
with the hounds, followers and whippers-in. The whippers-in carry whips to help prevent any hounds from straying from the pack. The hunt members
wear “colours” consisting of scarlet coats. The parliamentary term “whip” used as a term to enforce party discipline was taken from this assistant to the
huntsman.

Fish chowders were made by early
settlers using fish, milk, salt pork and ship’s biscuits. Clams were eventually used in place of the fish in stews off coastal England and France. Due
mostly to their abundance, early New England settlers began using quahogs, derived from the Narragansett Indian name for “poquauhock”. In the
17th and 18th centuries, the first chowders used a variety of typically English herbs and seasonings, such as marjoram, savory and thyme.
