The traditional dessert course in
Britain if often referred to as “afters”. Puddings are made with the same basic ingredients of milk, sugar, flour
and eggs. They can be baked, boiled
or steamed. Dishes are simple and
traditional with many recipes being passed down from generation to
generation. Fresh fruits,
custards, cream and cakes were later added to recipes. “The proof of the pudding’s in the
eating.”

Crème brûlèe is often referred to as Trinity Cream in parts of Britain, having been introduced publicly at Trinity College in Cambridge back in the late 1800’s. This vanilla-sweetened custard can also be enhanced with other flavours, such as chocolate, fruits and flavoured liqueurs.
